My Skyr moments

Skyr – a cornerstone of the Icelandic diet

Skyr is a deeply rooted Icelandic tradition, believed to have remained largely unchanged since the country's first settlement. Iceland's remote, unforgiving climate made growing a wide variety of crops difficult, so preserving food was essential. Icelanders pickled and stored food in skyr whey, which soured the food and helped keep it edible — a practice that also helped keep the skyr tradition itself alive for centuries.
